I tried curly kale a couple of times and didn't really like it - it's the bitter edge, like a lot of dark salad leaves have. Cavolo nero is quite different, a softer flavour with an almost buttery scent/flavour to it. I shred the leaves from the centre rib and steam/saute them for 5-15 minutes until the texture's right. It's chewier than spinach, doesn't reduce as much. I'll probably post my two favourite recipes this week.
I've never gone mushroom hunting ... maybe they'd catch my fancy more that way! I don't think I've tried those mushrooms but I'm not entirely sure what the mix has - Enoki, Cloud Ear, Chestnut and King Brown at least. I'll keep an eye for the others next time, thanks!
