Risotto with Beet Greens and Roasted Beets
It was pretty good? I usually avoid risottos that require all the stirring, I don't have the energy to stand there stirring for half an hour. But this one included the greens and I Iiked that so I just pulled a stool up to the stove and kept stirring.
Thoughts
Beet greens are pretty! I did not know that before I bought this lot.
Peeling beetroot is messy but fortunately I had disposable gloves.
The colour of the risotto was incredible. Really, really gorgeous.
The sweetness of the roasted beets came through in the risotto but whenever I bit into a larger piece of beetroot I got a hit of that earth flavour. I think it's a tastebud thing. Mum liked it but if the flavour had been any stronger I wouldn't have wanted to keep eating.
I still have a couple of beetroot and I'm considering something like Balsamic and Brown Sugar Glazed Beets for those.

Date: 2011-08-15 06:41 pm (UTC)I know what you mean about the earthy flavour of beets. I kind of like it, but only in small quantities. The moment it starts overwhelming the dish it's not for me any longer. Which is why I'm not very fond of borscht I think.
