I feel kind of blurry today

I cooked the last of the beetroot (except one) and beet greens tonight, using this recipe:
Simple Tempeh with Swiss Chard & Beets
But I didn't use tempeh. I tried it a couple of years ago, I think, and found it nice enough but I thought I'd go for one unaccustomed food per meal. Instead, I used a couple of chicken, brandy and herb sausages, sliced up and fried before adding the chard and beet greens. The whole meal was very pink and it was a little worrying this time as there was quite a bit of sauce sloshing around. Minimal mess, considering!
Overall, I quite liked it. A little too sweet (a bit less maple syrup, I think) and there was only a hint of earth flavour from the beetroot. I think the chicken sausage worked very well to balance out the sweetness.
I can't say beetroot is suddenly my favourite vegetable but it's not quite so alarming anymore! I also kept one beetroot to make baked beet chips. We'll see if they're any more interesting than kale chips. (Really do not understand the rave reviews there.)
