Cooking for one

Damn, it's cold today. *shivers* I cannot keep track of this weather. Good thing I didn't put the heater away.
The cat was allowed out today, came home before sunset without any new injuries so I'll count that as a win for now. He also found a new place to sleep when he came home - on the mousepad and the edge of the keyboard. By the time I saw this, he'd opened IE 81 times, rearranged the toolbar and generally upset the computer.
But at least I've finally managed to get the smell of cat pee out of the laundry. I hope. It really doesn't help the appetite to have a sudden drift of stink waft through the room (and the laundry is off the kitchen/dining area.)

But dinner tonight was good! Had stuffed capsicum, which was nice for a cold night. It does seem like rather a fuss for one person, not to mention the washing up ... it's not nearly as interesting just cooking for myself and that's assuming I have the energy to do it. Last week, I had some kale so I fiddled a bit with the Garlicky Kale with Toasted Coconut a couple of times (reduced the coconut and added some cooked quinoa. Nice but it reduces the crunchiness), made honey-soy chicken stirfry with snow peas a couple of times ...
After the concert, I had dinner from the freezer for a couple of nights (I made sure to have some easy things stored before Mum left), including a 'Healthy Choice' meal of Cashew Chicken with Rice.
It was ... edible. And that's all I can say for it.
I also tried a SunRice foil-packed meal of Black Bean Beef with Rice. With some extra vegetables it was quite pleasant, a definite step up from the Healthy Choice but wow, it showed why you'd want to cook for yourself. Imagine living on those night after night. Blegh. How depressing.
Roz gave me some tip rump steak on Wednesday, about 600g, which I divided up, having beef stirfry for two nights and freezing the rest. The first stirfry was meh and I overcooked the wombok which turned slimy (ick ick ick) but this ginger-balsamic one was pretty good. I don't think I had the balance of flavours quite right but I think it's worth trying again.
And now I have more washing up to do. But it was a nice dinner.

Date: 2011-10-02 10:09 pm (UTC)I would go crazy if I'd to cook every day. I usually make larger batches of whatever I'm doing and putting most of it in the freezer. That way I can have homemade food every day without having to do more than use the microwave oven. Of course, some things are better freshly made, particularly summer food, and some weeks I end up doing quite a lot of cooking.

Date: 2011-10-05 09:45 am (UTC)Yes, when Mum's home I cook maybe five nights a week and that's fine, I like doing that. But on my own, it's just not as interesting.
I like to make larger quantities of things like stews and some soups. Problem is that most things that freeze well are cool weather foods and we just don't get that much cool weather!
